“Intentional self-care” is one of the practices that I have been trying very hard to continue to practice now that I am no longer WFH. I have scheduled “Repair Days” every other week, or once a month at the very least. It is pretty much a day of focusing on what my body wants. This is the day where I would put a pause to the craziness of every day life- staying home from work and not commuting on the now more crowded train, putting a stop to invasive and stressful thoughts about work, and doing things that will heal my body and soul from aches and pains of daily life. Repair Days are when I take off from work to do as I wish such as letting my hair air dry naturally after a shower, wearing comfy pajamas instead of business casual, wearing socks and slippers instead of boots….Repair Days are for cooking, blogging, gardening and maybe leaving the house to do some fun food shopping.
Today is one of my Repair Days since I went back to the office at the end of May. This has been second Intentional Repair Day since then. Since I also have 10 million vacation and personal days (well, not 10 million but more like about 5 months) that I accumulated during the over year long lockdown, I am making an effort to use them by taking personal days off such as todayI
I really needed this time off today as the last couple of weeks I have been surrounded by challenges of emerging from the lockdown and living in the “new normal.” These gave me pause as I have learned the following lessons: That kindness does not really always beget kindness but we should not get tired of practicing kindness regardless. Negativity is insidious. Even if we guard our thoughts, heart and personal space, negativity would find a way to spread its toxicity in every nook and cranny of our hearts which is more the reason why self-care is very important.
Quiet times are healing. Food also never fails to make me feel better most especially when eaten in my safe space which is my kitchen overlooking my little garden. And today I had the most delicious breakfast that honestly made me feel rejuvenated and gave me perspective (thus, the insights above). And yes, clean and whole foods can also give us wisdom because who can think clearly when hungry or eating horribly fatty junk foods? (Although there are a time and place for those indulgences, too, within reason.)
Speaking of eating what I want, one of the things that I really miss from WFH (which is “Working From Home” by the way) is making fried egg on toast and enjoying it with coffee while in my pj’s, and while writing emails. I got really creative with my fried egg on toast breakfast depending on what type of bread and ingredients I had at the moment such as avocado, arugula, tomatoes, etc.
Thank you for reading and if you are still with me, let me share my recipe for Halloumi, Avocado and Fried Egg Breakfast Taco. You can use any cheese to make breakfast taco but using Halloumi just brings this humble taco to a thousand times level of yumminess.
So, what is Halloumi? According to Wikipedia, “Halloumi or haloumi (/həˈluːmi/) is a semi-hard, unripened cheese made from a mixture of goat’s and sheep’s milk, and sometimes also cow’s milk. It has a high melting point and so can easily be fried or grilled.”
The beauty of making your own breakfast tacos is you can get really creative and use whatever you have on hand. For me today, I found an unopened block of halloumi grilling cheese. I also happened to have avocados that were perfectly ripe. I also have corn tortillas instead of my usual sourdough bread. And lastly, my brother in law gave me a basket of freshly picked tomatoes from their garden. Believe me this meal was like medicine for my exhausted heart and body.
HALLOUMI, FRIED EGG AND AVOCADO BREAKFAST TACO
- 1 tablespoon oil for frying (EVOO or neutral oil such as vegetable or canola oil)
- Corn tortillas
- Halloumi or grilling cheese (or any cheese of your choice)
- Cilantro (optional)
- Wash and slice the avocado and tomatoes. Set aside.
- In a wide skillet, fry Halloumi or grilling cheese (if using this type of cheese) until crispy brown on the outside in about a tablespoon of oil.
- If the skillet is wide enough, keep the slice of grilling cheese on the side of the skilled to keep it hot while frying the egg. Fry the egg sunny side up or depending on how you like your egg.
- While the egg is frying, soften the corn tortillas in the microwave by putting it on a plate and covering it with damp towel. Heat for about 30 seconds.
- Set the egg aside on a plate and quickly fry the tortillas.
- When the tortillas are hot and fried, transfer them into a plate. Top the tortillas with the halloumi, fried egg, sliced avocados, sliced tomatoes and cilantro (optional).
- So good with Tabasco and hot coffee!
- Halloumi or other types of grilling cheese were so good to use in this recipe. The toasted cheese added a nice unexpected texture to the tacos. It was crispy on the outside while hot and gooey on the inside!
- If you cannot find grilling cheese, just use a different type such such slices of cheddar, Monterey Jack, Mexican blend, etc. Just place the cheese on top of the tortillas while frying to melt the cheese. Top with egg, avocado, etc.
- You may also use shredded cheese and follow the instruction on #2.
- Or top with Cotija which is a salty Mexican cheese.
- Instead of sunny side up, you can also make scrambled eggs. You may add shredded cheese to the eggs before frying.
- You can also add your choice of meats such as crumbled sausages, bacon, slices of Portuguese sausage, cooked ground beef, pork or chicken, etc.
- The sky is really the limit when making breakfast tacos. Make it your own and enjoy!
