Nowadays you cannot keep me out of the kitchen. I have always dreamed of days when I could cook all day, take photos and post them on my blog. Having to stay home due to sheltering in place order really gives me the time that I always wished for to play in my kitchen.
I have also been stalking cooking blogs and Jamie’s blog, The Gastronomy Gal is one of my all-time favorite blogs. It is on her blog where I learned how to make Tamago Egg Sandwich. Tamago Sando is egg sandwich in Japanese. (Tamago for egg and sando for sandwich.) I have been to few countries in Asia but I have not been to Japan yet. Someday! I read that tamago sando is a popular snack in Japan and can be found in every convenience store.
I love egg sandwich in general. In fact, whenever sandwiches are being offered during work meetings, I look for either egg or tuna sandwiches first. Tamago sando is egg salad sandwich. What enticed me to make this sandwich was the pretty slice of egg in the middle. I would not even attempt to tell you how to make it but please refer to Jamie’s video. I enjoyed making it and really enjoyed eating my egg salad sandwich afterwards.
And since it is Easter, you might have plenty of eggs leftover after egg hunt. (We are planning a very simple Easter next Sunday with just me and Mr Sweetie, and a family member who is on quarantine so it should be safe. We will practice social distancing while sharing a meal together.)
Make egg sandwiches and make them pretty. And next time you have a tea party at home after this crisis is over, serve your egg salad tamago sando style. I am sure that your guests with will be thrilled. (You can also have a virtual tea party and wow your guests!)
Here is my recipe for fluffy, creamy and pretty egg salad sandwich.
TAMAGO EGG SALAD SANDWICH
- 4 hard boiled eggs
- 1 tbsp. mayonnaise
- 1 tsp. mustard
- 1 tsp. relish
- Plenty of salt and pepper
- 2 soft boiled eggs, set aside
- 4 slices of white bread, crust removed
- Remove crusts from bread slices.
- Cut eggs into fourths. Add eggs, mayonnaise, relish, mustard, salt and pepper into a bowl. Mash with a fork until desire consistency. (Use a food processor if you want your egg salad smooth.) I like mine chunky.
- Spread egg filling evenly across four of the bread slices. Place remaining egg slices over filling. Slice sandwiches in half. (The sliced egg with egg yolk should be showing on the edge of the sandwich.)
- Top with your favorite topping such as Japanese seaweed seasoning, paprika, pepper, chives, etc.
NOTE: By the way, I am in no way affiliated with DASH kitchen gadgets but I used my DASH Egg Cooker to boil my eggs. I love boiled eggs so much that I bought this egg cooker. It takes few minutes to cook my egg, uses so much less water (about 5 tablespoons if not less to boil 6 eggs), and I am no longer in danger from exploding forgotten boiling eggs on my stove! You can also choose how you like your eggs boiled — from soft, medium or hard. I am obsessed with DASH products that I have so many DASH appliances (mini waffle maker, mini griddle, mini grill, the cutest rice cooker and mini candy maker!) And one Christmas, I bought like a dozen DASH mini waffle makers and gave them as presents!
