Wednesday is Veggie Night at my house. The veggies either came from the farmers’ market or delivered by Farm Fresh to You. I grew the chives myself.
I sauteed the veggies in EVOO (Extra Virgin Olive Oil):
- Portabello Mushrooms
- Bell Pepper
- Fresh Garlic
- Chives (I have a little herb garden on my windowsill)
- Half a lemon
The veggies were organic which made them very flavorful. The asparagus’ natural sweetness came out when caramelized.
We have been doing Veggie Night Wednesday for almost a year now and it makes us feel a little better about eating healthy (and less guilty during Takeout Friday).
TIP: I have two pans going on where I saute the veggies to save time. Then I saute all the veggies altogether in one pan before I serve them. The only seasonings I add are garlic salt, lemon pepper, a squeeze of lemon and fresh chives.
