persimmon salad

Date Night Girl Cooks

Getting a bi-weekly box of organic produce from Farm Fresh To You delivered to our house inspires me (and forces me) to create seasonal and healthy vegetarian dishes.

Out of the recesses of my culinary mind, I do not know how I came up with:

Autumn Fuyu Persimmon, Avocado, Tomato and Lettuce Salad

Dressing: Mix together Persian Lime EVOO (Stonehouse California Olive Oil from SF), ½ lime juice, feta and fresh black peppers.

Every veggie came from Farm Fresh to You except for the avocado. I even added radicchio on mine but did not put them in my guy’s salad because he does not like anything bitter. Once mixed in, the radiocchio did not even taste overly bitter and even enhanced the sweetness of the persimmons, avocado and tomatoes.

I served this salad with lasagna and it was a big hit that I want to remember to make this again every Fall!
